Kefir is a nutritious probiotic beverage that has been consumed for centuries. This fermented food originated from the Caucasus mountains, and is popular in Russia, southwestern Asia and Eastern and Northern Europe. Only recently, Kefir has been introduced to Singapore via several specialty/organic foods supermarkets (figure 1). To most Singaporeans, kefir remains rather unheard of. In comparison, other probiotic beverages like Yakult and Greek Yogurt, which have entered the Singapore market much earlier, are much more well-known and more widely consumed by many Singaporeans. This workshop aims to introduce Tamarind hall residents to the superfood kefir, and let them experience the process of brewing their own kefir drink.
